We LOVE the outdoors here at Intervine, we breathe it, we live in it, we sleep in it and we eat in it too. Although the last part can be both the most rewarding and the most troublesome. Because of this we decided to share some of our favourite one pan recipes and other useful tips. Let's dive right in!
All recipes are ideal to cook on an open fire with a grill plate or BBQ.
Ingredients for 3 pancakes, 1 egg, 1 ripe banana, cup of rolled oats. Splash of oil (coconut oil is our favorite).
These can be used as breakfast or lunch or even a quick snack. They are packed with slow releasing energy, potassium from the banana (read more about how your body uses it here) and protein. If you want to pimp them up a little add cacao, chia seeds, vanilla extract or cinnamon for more added goodness for the body and taste for the mouth! Depending how extreme your camping trip is and the availability but fresh fruit on the top or some fresh maple syrup really finishes these off nicely.
Instructions - Peel the banana and mash into a bowl with a fork. Crack the egg into the bowl and mix well with the banana. Add extras (cinnamon etc) and mix well. Finally start to add the oats slowly, stirring the mixture until you have the consistency of oatmeal. Heat the oil in the frying pan or skillet and add the pancakes, use the back of the fork to manipulate the mixture to lie flat in the pan. Flip when golden brown and when both sides are brown, add any extra fruit garnish or simply enjoy your healthy breakfast.
Ingredients, 1 lb ground beef (80%+ lean), 1 egg, seasoning salt and black pepper, 1/2 tsp garlic powder, 1tsp crushed cumin seeds, 4 small potatoes peeled and sliced, 1 lb baby carrots, 2 Tbsp olive oil, 4 slices cheese.
These are not your average burgers. They are a great alternative with some veggies all cooked and housed in a foil pouch of mouth watering goodness. This meal provides you with plenty of energy, protein and vitamins to hold you off until dinner.
Instructions - In a bowl mix together the ground beef, the egg, the garlic powder, cumin seeds and salt and pepper to taste. Mix thoroughly and then shape into 4 patties with your hands and set them aside. Rinse the bowl, add the veggies, oil, salt and pepper to taste and mix them well. Cut four 12'' x18'' pieces of foil and grease with a little oil. Place 1/4 of the vegetables in the center of the foil and pop the beef patty on top. Seal packets well and place beef side up on the grill for around 35 mins. Remove foil packet and check if the veggies are tender, if so add your cheese, re seal and place on the grill for a minute or so to melt the cheese. If the veggies are not tender, return the packet to the grill for another 10 minutes or so until tender. Then remove from the grill, eat and enjoy!
Dough Ingredients, 2-2 1/3 cups all-purpose flour, 1 packet instant yeast (2 1/4 teaspoon), 3/4 teaspoon salt, (1/8-1/4 teaspoon garlic powder and/or dried basil leaves optional) 2 Tablespoons olive oil plus an additional 3/4 cup warm water.
Sauce Ingredients, 30 oz of Canned tomato sauce with or without flavouring.
Topping ingredients, Mozzarella cheese, peppers, onions, boiled egg (sounds weird but trust us!)
Who doesn’t love pizza right? But how many of you have had a real pizza cooked on the BBQ? The real treat here is how the bottom of the pizza gets the chargrilled BBQ flavor while keeping the top nice and moist.
Instructions - Combine 1 cup of flour, instant yeast, and salt in a large bowl. If desired, add garlic powder and dried basil at this point as well. Add olive oil and warm water and stir very well. Gradually add another 1 cup of flour. Add any additional flour as needed, stirring until the dough is forming into an elastic ball. If you can touch it, it feels sticky but does not stick to your hands/fingers, you are good to go. Drizzle a splash of oil into a separate bowl and grease the bowl evenly. Use your hands to roll the pizza dough along the inside of the bowl until it is coated in olive oil, then cover the bowl tightly with a towel and place it in a warm place. Allow dough to rise for 30 minutes or until doubled in size.
Once the dough has risen, use your hands to gently deflate it and transfer to a lightly floured surface and knead briefly until smooth (about 3-5 times). Use either your hands or a rolling pin to work the dough into a square (will be easier to manage on the grill). Pinch the edges and corners to form the crust and you have a pizza dough.
Here is where we advise that you do this at home and pop the dough into a freezer bag. Defrost during the daytime, let it warm up naturally and you have a ready to go pizza dough!
Spread the dough out, coat lightly with olive oil and place on the grill for 5-10 minutes lifting occasionally to check it is not burning. Once happy it is cooked, flip it over. Open the tin of tomato sauce and spread evenly over the pizza, add your topping choices and cook for another 5-10 mins until the bottom is brown and firm. Enjoy!
Ingredients, 4 bananas, chocolate bar, marshmallows, M&M’s, etc.
Everyone needs dessert right???? This is one of our favourite camping treats from times gone by.
Instructions - Leaving the skins on the bananas, cut a slit down the middle from top to bottom. Stuff the slit with honestly, whatever you like, personally chocolate is our favorite but we have tried and enjoyed many variables to chocolate. Wrap the bananas in foil, keeping the cut side upright and put on the barbecue in the hot embers. Leave for 20-25 mins, until the chocolate has softened. Remove, leave to cool for a moment before enjoying!
Ingredients, 4 Graham crackers broken in half (8 pieces), 4 large marshmallows, 4 squares of chocolate.
S’mores have been a camping treat since the girl scout cooking guide in 1927. There are infinite ways of making them but here is our tried and proven simple recipe.
Instructions Cut out 4 squares of tin foil big enough to wrap the treats in. Put 1 cracker on each piece of foil and top with 2 chunks of chocolate and a marshmallow. Place the other biscuit on top and wrap each parcel tightly. Put the s’mores on a hot barbecue and warm through for 2 mins on each side, so that the chocolate and marshmallows are just melted. Remove and allow to cool slightly before carefully peeling off the foil and enjoying these treats!

Tent - There are some things you can cut corners on, your tent should not be one of them. This is a great home on the move.
Headtorch - I have always found a headlamp invaluable camping. Free hands, plenty of light, easy to pack and travel with.
Knife - The Swiss army knife. I NEVER camp or travel without one of these. Multi use, lightweight and built by the Swiss.
Batteries - Spare batteries are a godsend in the wild. Don’t get stuck in the dark.
Cooler - When things that should be cold get warm it is not a fun time for anyone.

Something indescribably magical happens to regular, grocery store goods on a camping trip—ask any avid camper and they’ll tell you meals prepared in the outdoors taste infinitely better.
Like, significantly better than when cooked indoors.
I don’t understand it. I cannot explain it. But I know with 100% certainty that this statement is true.
